Amazing Beef Short Ribs

Who loves Crock-Pot meals?  I for one certainly do!!!  I wish I could take credit for this one guys because it’s one of my most favorite meals, but I can not.  The credit goes to my awesome Husband who is a pretty amazing cook!

This short rib recipe is so incredibly tasty my mouth waters every time I think about it.  It’s a staple in this house!

So let’s not waste anymore time and get to it!

This recipe takes about 10 minutes to prepare and then all you have to do is sit back and let that magical Crock-Pot do all the cooking for you!

Ingredients:

  • 2 Packages of Beef Bone In Short Ribs (4-5lbs)
  • 4 Red Potatoes
  • 8 Carrots
  • Olive Oil
  • Garlic
  • Salt
  • Pepper
  • Weber KC BBQ Rub

For the Veggies:

Wash and cut the potatoes into approximately 1 inch thick cubes then peel and cut the carrots into 2 inch pieces then cut in half lengthwise.  My husband, as you see, chops them up into manly rustic pieces.  🙂  You basically just want the thicknesses to be the same so they cook evenly.

Put the Veggies in a bowl with the following amounts of ingredients:

  • 2 tbsp Garlic
  • 1/4 cup Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper

Mix with your hands until everything is evenly coated then toss them in the Crock-Pot.

For the Meat:

  • 1/4 cup Olive Oil
  • 1 Heaping tbsp Garlic
  • 2 tbsp Webber BBQ Rub

Combine the above ingredients into a bowl.  Take each piece of short rib and dip it in the mixture making sure to coat it on all sides.  This should be enough spice mixture to coat all the ribs but if you feel you need more, mix up some more of that spice goodness!  For added flavor you can add more of the BBQ rub if you’d like.

Set the ribs on top of the veggies, bone side up, then cook on low for for 6-8 hours and get ready for your house to smell AMAZING!
